leftovers
When my children were little, and we had leftovers, I used to say we were
having Smorgasbord.
I think many dishes taste better the second day after the different
ingredients have had a chance to blend.

Leftovers...Yum!
I love leftovers, and all my friends and coworkers know it! Some of
them -don't- like leftovers, or their families won't eat them, so
frequently these folks will give their leftovers to me. As a single
person, I don't really like cooking for one, even if I can freeze the
rest for later; so it works out great--my friends don't have the guilt
of wasting food, and I have good stuff to eat.
And I agree, many things -are- better the next day, like soups/stews,
gravies, pasta and sauces, and sandwich stuff like tuna salad.

agedflavors
Or maybe you're just so hungry it seems to have improved:) Could be like
sourdough bread. Getting it's flavor from the environment.

Leftovers
With a schedule like mine, working ten hours a day, having rehearsals
Monday nights, church committee meetings Tuesday nights, and spending
hours on the freeway on trips transporting my son, I've learned long ago
to prepare enough to have something that is all ready to be nuked.
Many times the flavor of the dish has actually improved after a day or
two, as the seasonings have had a chance to meld more.
