Basted/Steam Fried

My favorite way isn't listed either. My mother usually cooked our eggs by pouring a bit of water into the pan and putting a lid on it. The water would turn to steam and cook the tops of the eggs without having to flip them. She called them "steam fried".

It took me 30 years to find out how to order them this way at a restaurant!! Most places refer to them as "Basted".

What I like best about this method is that the white gets fully cooked, but the yolks stay soft enough for toast dipping.

I also like Poached eggs, but that option wasn't there either...

Wouldn't you know it, no matter how many ways of preparing eggs they list, my favorite isn't listed!

When I was a kid on the farm, Mom used to make something that all us kids loved and requested.... AND was good for us! "Egg on toast" was quick, easy, and yummy.

I carried this on to my own family, and my son loves it, too. I boil water, and then add eggs in the shell. At that time, I start the timer for 4 minutes, and also start the toast. When the timer goes, turn off the burner, rinse the eggs under cold water to stop them from cooking more. They will be slightly runny yolks. Extract the eggs from the shells with a knife, and let them fall onto the toast. We distribute the egg evenly across the toast and then add salt and pepper. Voila! And, Bon Apetit!
