Spaghetti and Eggs...

KK, one of my favorite sauces for spaghetti is an egg/butter/herb sauce, very quick and easy.

Beat eggs (one per serving) in a bowl with herbs (garlic, parsley basil and thyme leaf are a good mix). Drain the spaghetti and, while it is still hot, pour this mixture over the spaghetti and toss. The hot spaghetti will cook the eggs a bit, making it rather sticky. Add butter (or olive oil) and toss a bit more. Very tasty, and a nice change from tomato sauce.

(And yes, there are a few Italian Lutherans out there :->)

eggs without toast?

Although bacon is beautiful and sausage is grand, potatoes add an extra something and hash really sets off the plate what would eggs be without bread?

What goes with eggs?

I love spaghetti and eggs! My grandmother used this to help stretch the food further. The day after they had a spaghetti dinner, she would use the spaghetti left over and fry them up with the eggs the next day. Hmmm this reminds me I haven't fixed this in awhile, will need to fix it this week, I know my dad will enjoy it.

Oh, Perelandra, that sounds so good. I am going to try it.

I love eggs. During those years when they were trying to tell us that eggs weren't good for us, I still ate eggs, only I felt really guilty about it. Eggs are good, however you fix them.

Breakfast...

I like eggs. Also bacon, hash browns, biscuits, gravy, toast, and milk or OJ. I agree, there should have been an "All of the above," or at least "Some of the above"!
My favorite breakfast is eggs scrambled with salsa, shredded cheese, olive bits and jalapeno slices, rolled into a burrito shell with more shreadded cheese and sour cream. If I roll it right, I can pick it up and eat it; if not, oh, well--that's why God inspired someone to invent the fork!

Hey, what about your southern members? Grits, of course. If you have never tried them, you are really missing a great side dish to eggs. No fattening meat in our diet.

I choose other because there was no all of the above. I like salsa on my eggs or rather eggs under my salsa I will try Don the norski Reciepe.

Eggs and.....

Being the true Norski that I am, I couldn't think of a day without fish. Whether a joke about lutefisk, or missing some good pickled herring, there's always thoughts of fish.

Fred Meyer, a regional grocery chain that was bought out by Kroger several years ago (booo, hisss) carries a product in their service meat case called "lox bits".

The best eggs I make are with lox bits! You know lox? That stuff that costs like $15 per pound for the perfectly shaped wafer thin slices of salmon, cool smoked so exquisitely? Well, these are the pieces from around the edges and ends. Same stuff, but in 'bits'.

I saute some minced onion, minced bell pepper, mushroom, celery, garlic, and then add to that an egg mixture consisting of well-beaten eggs, milk, and some dill and tarragon. Over the top of the eggs, I lay the pieces of lox, and turn the heat down so that it cooks slowly, allowing it to be light.

Its marvelous!
