CHERRY DELIGHT Graham Cracker Crust 2 1/2 cups graham cracker crumbs 6 tablespoons sugar 2/3 cups butter or margarine 1 to 2 teaspoons of Knox unflavored gelatin Combine graham cracker crumbs, sugar, and gelatin in bowl. Stir in melted butter or margarine. Pack mixture into a 10 x 14 baking pan and cool in the refrigerator for an hour. Filling: 4 cups powdered sugar 2 - 8oz. light or fat free cream cheese, softened 1½ cartons lite or fat free whipped topping 2 cans cherry pie filling Mix cream cheese and powdered sugar together with a mixer. Fold in whipped topping. Spread on chilled crust and top with cherry pie filling. This recipe can be cut in half for a smaller dish or for a pie.
