MICROWAVE APPLES 1/4 cup walnuts or pecans 4 medium tart apples (like Granny Smith) 6 Tablespoons brown sugar 1/2 teaspoon apple pie spice or cinnamon 4 Tablespoons butter Microwave walnuts or pecans 2-3 minutes until fragrant & toasted. Core the apples but leave the skin on (or you can peel them and cut in half). Place in a microwave-safe baking dish and microwave on high for 2 minutes. Mix together brown sugar and apple pie spice (or cinnamon). Spoon sugar mixture into the center of each apple and top each apple off with 1 Tablespoon of butter. Return apples to microwave for about 1 minute or to your taste. Top with toasted nuts and serve. This is good for office or home because you can do just one apple or several at a time.
