1 Cup Sugar
2 Cups Flour
3/4 Cup Butter ( one and a half sticks)
1 Cup grated coconut
1/2 Cup chopped nuts
1 egg
1/4 teaspoon salt
1 teaspoon Vanilla
1 10 ounce jar- cherry, raspberry or apricot jam

Preheat oven to 350 degrees F.
Mix together with fork all but the last ingredient.
Press three fourths of the batter in bottom of 9"X13" pan.
Spread jam on top.
Sprinkle or crumble remainder of batter over top of jam,
letting some jam show through.
I sometimes add extra coconut or nuts to the topping.

Combine the following ingredients:

I Can Goya Black Beans, rinsed
4 large plum tomatoes, peeled and diced
2 ribs celery, diced
1 cup frozen corn- don't bother defrosting

Mix togther the following ingredients for dressing,

2 Tablespoons freshly squeezed lime juice
2 Tablespoons extra virgin olive oil
2 shallots, finely chopped
1 teaspoon Cumin
2 Tablespoons chopped parsley
2 Tablespoons chopped cilantro
Salt and freshly ground pepper to taste
